I must say, for as much as I like my new job, I liked our weekends much more when I wasn’t working. Don’t get me wrong, 48 straight hours with my love is total bliss. But we didn’t stop all weekend and STILL didn’t get everything done we wanted to do. I don’t think Staci likes it any better than I do because she is now the weekday housekeeper. We didn’t even have to clean this weekend and still were going like crazy.
Fun times, I lost my cellphone for the first time ever on Saturday. We had only been to 100 places so trying to find it was not fun. It was not at place #1, it was at place #100. But thankfully, I found it. We were at Ulta, Hobby Lobby, Ellis Pottery and then Kroger. Grabbed some more fall stuff for the house and it has been sufficiently blinged! We didn’t get to the outside setup but that can wait since it’s 90 degrees anyway!
It was a great food weekend. I made salt and pepper wings on Saturday and this absolutely UNBEATABLE spicy cilantro sauce. It has cilantro (obviously), the zest and juice of 2 limes, a seeded serrano pepper, garlic, Worcestershire sauce and melted butter all whipped into a zingy frenzy that doesn’t taste spicy but leaves heat on your lips. It was so delicious I would eat it on SHOE LEATHER!! I also made some homemade coleslaw to go with it, even shredded the cabbage myself.
Even though it is said-90 degrees, it is still fall and I was in the mood for chicken and dumplings. I went all out and made everything from scratch. I decided to sear the chicken first for extra depth of flavor and it was worth it. Spent a couple of hours making my own stock after making breakfast. And the dumplings were buttermilk chive. Everything came out great. And I made some no bake chocolate peanut butter oat bars. Too sweet for me but Staci loves them.
I finished decorating the house and put together my niece’s birthday present to be mailed out this week. That girl is going to be FIFTEEN which is crazy! Kids sure know how to make time fly.
I’m so sorry I haven’t gotten any recipes uploaded. Time just keeps getting away from me. I’ll try and be more disciplined but pile-up with Staci, the bootiesnaps and TV is an awfully strong pull. Have a great week, everybody!
